Two days ago I shared my recipe for crostini. Well here’s a bread-less cousin to crostini: broiled tomatoes.
The recipe is so simple that it almost isn’t a recipe!
- 1 beefsteak tomato, sliced in 1/4 inch pieces
- Italian seasoning--oregano leaf, basil leaf, etc.
- Fresh Parmesan, grated
- Place tomato slices on a rimmed baking sheet. Sprinkle desired amount of Italian seasoning on each slice. Broil on high for 1-2 minutes until warm.
- Take out. Sprinkle desired amount of Parmesan cheese on each slice. Broil for 2 minutes or until the Parmesan cheese is slightly melted together.
- Serve immediately.
