Sandwiches are really very easy to make and much healthier than some other lunch meals. Especially in autumn, soup and sandwiches go together great! But it was warm today so I just had the sandwich.

Ingredients
- Hard roll (crunchy on the outside and soft on the inside)
- Cheddar cheese
- Onion
- Red pepper
- Fresh spinach
- Black ground pepper
- Thinly sliced chicken breast (deli style)
Instructions
- Slice the bun in half to make a top and bottom for the sandwich.
- Thinly slice the cheese. Place cheese on both halves to cover each inside.
- Layer the chicken one piece at a time onto each half.
- Slice slivers of onion and red pepper onto each half. Lay fresh spinach over the top half. Put thin slices of cheese on the spinach. Sprinkle with black pepper.
- Gently close the sandwich together and cut in half.
- You can put a little Italian dressing or Caesar dressing in a dipping bowl or on the side of your plate to dunk before each delicious bite. Or you can eat it plain!
