Have you ever heard of German chocolate pie? I learned about it from my friend, Janet, who bakes marvelous creations. I am spotlighting her recipe she graciously shared with me!
This pie is incredibly rich and delicious. If you have leftovers, just eat it for breakfast. That is what I did!
The best descriptors for this pie are marvelous and wonderful, so today’s song is “S’Wonderful” sung by Ella Fitzgerald. Her jazzy version of this George and Ira Gershwin tune is showcased in the movie “Funny Face.” If you haven’t seen Audrey Hepburn as the bookworm philosopher turned high-fashion model, you should. The sophisticated Audrey is a perfect paring with this sophisticated German chocolate pie!
This is an amazing pie recipe from my friend Janet!
Ingredients
- 4 ounces German chocolate (2 squares)
- ½ cup butter
- 12 ounces evaporated milk
- 1½ cup granulated sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla
- 1 unbaked pie shell in a pie dish
- ½ cup butter
- ¼ cup brown sugar, packed
- 2 tablespoons cream
- 2 tablespoons light corn syrup
- 1 cup coconut
- ½ cup pecans
- 1 teaspoon vanilla
Instructions
- Preheat oven to 375 degrees.
- Melt chocolate and butter in a saucepan over low heat.
- Gradually stir in evaporated milk.
- In a bowl combine sugar, cornstarch and salt.
- Add sugar mixture to chocolate mixture.
- In a small bowl, beat eggs with a fork.
- Add vanilla to eggs. Stir with a fork.
- Bake for 35-40 minutes. While cooling, make coconut pecan topping.
- Melt butter in a large saucepan.
- Add brown sugar, cream, and corn syrup.
- Cook over medium heat until smooth and bubbly.
- Remove from heat.
- Stir in coconut, pecans, and vanilla. Cool for few minutes. Do not let it set though.
- Pour over slightly cooled pie.
- Refrigerate for one day for optimum flavor.
