Broiled Tomatoes

Two days ago I shared my recipe for crostini. Well here’s a bread-less cousin to crostini: broiled tomatoes.

The recipe is so simple that it almost isn’t a recipe!

Since this is an “easy” recipe, here’s Chet Baker singing “I Fall in Love Too Easily.”

Broiled Tomatoes

Ingredients

  • 1 beefsteak tomato, sliced in 1/4 inch pieces
  • Italian seasoning--oregano leaf, basil leaf, etc.
  • Fresh Parmesan, grated

Instructions

  1. Place tomato slices on a rimmed baking sheet. Sprinkle desired amount of Italian seasoning on each slice. Broil on high for 1-2 minutes until warm.
  2. Take out. Sprinkle desired amount of Parmesan cheese on each slice. Broil for 2 minutes or until the Parmesan cheese is slightly melted together.
  3. Serve immediately.
